Cast Iron Skillet Dutch Baby Pancakes Recipe

You may have noticed, I’m a bit cast iron skillet baking crazy lately. I’ve developed a serious addition to baking with my antique cast iron skillets. There is something about putting a cast iron skillet on the table with a beautiful, delicious, bubbling baked item in it. It has that “Ah” factor. It makes you feel like you are eating something extra special. 

In the past week I have made my Cast Iron Skillet Dutch Baby Pancakes Recipe for my family 3 times. They are DELICIOUS. Buttery, sweet with a hint of tartness, crunchy on the edges and soft and chewy in the center…. seriously SO GOOD! I don’t know if I will ever make regular pancakes again. 

I feel like a bad Canadian saying this, but there is no maple syrup in sight when you make Dutch Baby Pancakes. You sprinkle them with lemon juice and confectioners’ sugar and serve. I’ve heard people say that they serve them with marmalade or jam but for my family the confectioners’ sugar and lemon is more than good enough. 

Cast Iron Skillet Dutch Baby Pancakes Recipe

These mouthwatering, easy Dutch Baby Pancakes uses simple ingredients-- milk, eggs, flour, butter and sugar to make a family friendly breakfast you will love. Quick and easy to prep, perfect for breakfast, brunch, breakfast for dinner or a midday snack! #Recipe #SimpleRecipe #Eggs #RealFood #Pancakes #DutchBabyPancakes

Ingredients:

  • 1/3 cup flour
  • 1/2 cup milk
  • 2 eggs
  • Pinch of nutmeg or cinnamon
  • 2 tablespoons of butter
  • Confectioners’ sugar
  • Fresh lemon juice
  • Optional: Top with fresh fruit or make a simple berry syrup by heating fresh or frozen berries on the stovetop

Directions:

Step 1: Preheat oven to 425 degrees F. Put your cast iron frying pan in the oven to preheat as well.

Step 2: While oven is preheating combine flour, milk, eggs and nutmeg or cinnamon in a bowl. Whisk until combined.

Step 3: When oven is done preheating place butter in cast iron frying pan and close the door for a minute giving the butter a chance to melt.

Step 4: Take your pan out of the oven, pour batter in, swirl around the pan, then put pan in the oven. Cook for 15-20 minutes or until the pancake is golden brown. 

Step 5: Remove from oven and sprinkle with confectioners’ sugar and lemon juice. Serve and enjoy!

Optional: Top with fresh fruit or make a simple berry syrup by heating fresh or frozen berries on the stovetop

Recipe serves 2 people. You can double the recipe and cook 2 pans of Dutch Baby Pancakes at one time.

  3. Had these in Holland more than 30 years ago. They put sliced apples and cinnamon in the pan before the batter was poured in. Ate them with brown sugar, just yummy. Will have to pull out my cast iron skillet and try them.
