Cherry Coconut Lime Popsicles Recipe (with an extra healthy surprise!)

Ice pops are one of my favorite things about summer and this Cherry Coconut Lime Popsicles Recipe does not disappoint! With no added sugar, this recipe is a healthy treat, but it also has an extra special ingredient that ups the health quota! Easy to make, refreshing and a recipe kids and adults will love!

Did you have pregnancy cravings? With both of my kids I craved cherries! Bean has an August birthday so I was able to get local cherries for a month or two before she was born. Turtle was born in June so I had to do with frozen cherries when I was pregnant with him. I’m not sure if it has anything to do with what I craved when I was pregnant with both of them, or just because they are delicious, but my kids LOVE cherries. The second they see them in the grocery store they start begging for them. I always make them be patient and wait for our “local” Okanagan cherries to come into season. They are THE BEST. 

Last week I saw on our farmer’s stand Facebook page that local cherries had arrived. I told the kids and later that afternoon we headed over to pick up a bag, and they were already sold out. You should have seen how sad their faces were when they saw the empty table with the “Sold Out! Try back tomorrow!” sign. A couple of days later I sent The Hubs by on his way home from work and he had more luck than us. My kids were treated with a big bag of cherries when Daddy got home! 

Cherries are a summer flavor for me. When I think of summer flavors I also think of coconut and lime which pair beautifully with cherries! I decided to take some of the cherries to make a cool summer treat– Cherry Coconut Lime Popsicles!

With no added sugar, this recipe is a healthy treat, but it also has an extra special ingredient that ups the health quota! Easy to make, refreshing and a recipe kids and adults will love!

These popsicles have two secret twists!

  1. The coconut flavor comes from coconut extract! I love the extracts from Olive Nation. They are so flavorful and a little goes a really long way! I have their coconut and pineapple extracts, but this tropical extracts combo pack will probably be my next purchase! 
  2. Not only are these popsicles packed full of vitamins and nutrients from the cherries and fresh lime juice… they are also filled with all kinds of other vitamins and minerals thanks to a scoop of Genuine Health Greens+! Greens Plus is a blend of  over 23 plant-based essential nutrients. It’s an easy (and tasty) way to get extra fruit and veggie nutrients into your popsicles! I used Original Greens+ in this recipe but you can also get Greens+ For Kids

My other not so secret toosl for this recipe is a cherry pitter and a citrus juicer/reamer . I love my cherry pitter. I used to try to pit my cherries by hand. A cherry pitter saves so much time and fruit! I use my citrus juicer almost every single day. We love fresh lemon and lime juice and use it with many meals.

Cherry Coconut Lime Popsicles Recipe (with an extra healthy surprise!)

Ingredients:

-2 cups of cherries, pitted

-3 limes, juiced (did you know that a ripe lime is closer to yellow in color than green? Yellow limes will yield more juice. Look for limes this color at the grocery store. If you are lucky you might find some with discounted produce! Roll your lime on the counter before juicing to yield even more juice.)

-1 teaspoon coconut extract

1 scoop Genuine Health Greens+ or Greens+ For Kids

Other tools that may come in handy:

Cherry pitter 

Citrus juicer/reamer

-Blender (we love our Blendtech) or Food Processor (we love our Breville Sous Chef)

Zoku Quick Pop Maker or other Zoku Pop Molds

Directions: 

Step 1: Pit your cherries and juice your limes. 

Step 2: Put cherries, lime juice, coconut extract and Greens+ in your blender or food processor. Blend/process until smooth. 

Step 3: Pour into your popsicle molds and allow to freeze. Serve and enjoy!
