Friends, I’m about to introduce you to my latest obsession– breakfast cookies! They are delicious, nutritious and an excellent way to start the day! My inspiration for these cookies came from one of the kiddos in my kids cooking class. I asked for ideas of what they wanted to learn to cook or bake in class (bonus points if it was something healthy since I strongly believe in filling kids up with food that is yummy and good for their bodies). One of my students told me that he wanted to learn how to make healthy cookies. I loved the idea and started experimenting last week with a cranberry almond health breakfast cookie recipe, which I made with my parent and tots cooking class over the weekend. They were delicious, but in the back of my mind I had a version floating around that had coconut, macadamia nuts and chocolate! Oh friends… my Chocolate Coconut Macadamia Nut Healthy Breakfast Cookies Recipe is THE BEST!!!

I know what you are thinking. “Chocolate, doesn’t that automatically make these unhealthy?” Here’s my secret, don’t tell the kids! The chocolate flavor in these cookies comes from raw cacao! Raw cacao is my favorite of all the superfoods because well… it tastes like chocolate! 

I think the word superfood is a bit overused, but raw cacao is definitely filled with a bunch of stuff that makes your body super happy and healthy! 

Some facts about raw cacao:

-Raw cacao has more calcium than cow’s milk!

-Raw cacao has 40 times the antioxidants of blueberries!

-Raw cacao is a natural anti-depressant and mood lifter!

-Raw cacao is the highest plant based source of iron!

-Raw cacao is full of magnesium which leads to a healthy heart and brain!

Amazing right? I always have a container of raw cacao in my pantry and use it all the time for hot chocolate, in baking and even as a popcorn topper!

Now a bit more information about these Chocolate Coconut Macadamia Nut Breakfast Cookies!

-They’re gluten free (if you are making them for someone with celiac disease or who is gluten intolerant make sure to use gluten free oats. Oats themselves are gluten free, but gluten free oats are packaged in a gluten free facility so there is no chance of cross contamination.)

-They are low in sugar. These cookies aren’t overly sweet, which might take some getting used to for some people… but really, who needs a breakfast full of sugar?

-They are dairy free, for anyone who has dairy sensitivities.

-They are basically a bowl of oatmeal, in a form that is easy to transport– a cookie! And everyone knows that oatmeal is a great way to start the day, a meal that will really stick to your ribs!

-They can be frozen, then popped into the toaster oven to be warmed for a delicious warm meal on the go. 

-If you are trying to add more protein to your diet, you can easily add a scoop or two of protein powder to the mix for an extra boost of protein!

Chocolate Coconut Macadamia Nut Healthy Breakfast Cookies Recipe

Looking for a delicious, easy and healthy breakfast idea? This chocolate coconut macadamia nut healthy breakfast cookies recipe is a delicious and guilt free way to start the day! Ingredients:

-1/2 cup coconut milk (make your own with our homemade coconut milk recipe. It’s so easy!)
-2 tablespoons raw cacao
-1 teaspoon pure vanilla extract
-1 tablespoon cinnamon
-½ teaspoon sea salt
-2 eggs
-¼ cup coconut oil, melted
-¼ cup honey (or other favorite liquid sweetener like pure maple syrup or agave)
-¼ cup ground flaxseed
-2/3 cups chopped macadamia nuts
-2/3 cups unsweetened coconut (I used Bob’s Red Mill Coconut Flakes in this recipe but you can use unsweetened shredded coconut too.)
-2 cups quick cooking oats
-Optional: pinch of cayenne (I love the combination of chocolate and cinnamon with a bit of a kick!)

Directions: 

Step 1: Preheat your oven to 350F and line 2 baking sheets. 

Step 2: Melt coconut oil and honey.

Step 3: In a large bowl, whisk together coconut milk, eggs, raw cacao, vanilla, cinnamon, sea salt, and cayenne if you are using. Add melted coconut oil and honey and whisk until incorporated.  

Step 4: Add oats, ground flax seeds, macadamia nuts and coconut. Fold together until all ingredients are wet and thoroughly mixed together.

Step 5: Using a 1/4 measuring cup, scoop cookie batter and lay it on your cookie sheet. Push mixture down and shape into cookie shapes. Make sure your batter is quite compact so that it holds together once baked. This batter will not spread when baking. 

Step 6: Bake for 15-20 minutes or until cookies are golden brown. Remove from oven and allow to cool for 5-10 minutes before eating. Store leftovers in a sealed container in the fridge or freezer.
