Chocolate Coconut Rice Pudding Recipe

I love watching the food network, I could watch it all day long. I love seeing people in action in the kitchen, picking up cooking tips and being inspired by their recipes. Some of my very favorite recipes are ones that were inspired by something that I saw on the food network and then made my own.  I also love watching shows like Chopped Canada where chefs have to take mystery ingredients, that they possibly  haven’t worked with before, and create their own recipes.

A few weeks ago, I had the opportunity to watch Chopped Canada’s Chef John Higgins, cook with an ingredient that I’ve never used before… Minute Rice. I watched in amazement as he quickly created both a savoury and a sweet dish– Veggie Rice Lasagna Loaf and Pear and Cranberry Rice Pudding. 

I’ve never bought minute rice before and didn’t really know what it was, so I decided to figure it out.

“Contrary to common misconceptions, instant rice is as nutritious as long cook rice,” said Norma D’Onofrio, Senior Brand Manager,Minute Rice, explaining that instant rice is long grain rice that is simply pre-cooked, and then dried, in order to significantly cut down on the cooking time required by consumers.

I decided to take a page out of Chef Higgins book and create my own rice pudding recipe using homemade coconut milk, unsweetened cocoa powder, honey, vanilla and Minute Rice. One of my favorite things about this dessert is that it can be made start to finish in less than 20 minutes! Read on for my recipe!

Chocolate Coconut Rice Pudding Recipe

 
Ingredients:

  • 1/2 cup of shredded unsweetened coconut
  • 1 1/2 cups of water
  • 1/2 tablespoon of unsweetened cocoa powder like Fry’s Cocoa Powder
  • 1 tablespoon of honey
  • 1/2 teaspoon of vanilla
  • Dash of cinnamon
  • 1 egg
  • 3/4 cup of minute rice

Directions:

  • In a small saucepan combine coconut, water, cocoa powder, honey and vanilla. Bring to a boil, reduce heat to medium and let bubble for 2-5 minutes. 
  • Transfer coconut mixture to your blender (a high speed blender like a Blendtec works best). Blend for 60 seconds. 
  • Pour mixture through a fine mesh sieve into a bowl or a measuring cup. Push as much liquid as possible out of the coconut pulp. Congratulations! You’ve made homemade chocolate coconut milk!
  • In a small to medium saucepan combine rice and 1 cup of your chocolate coconut milk. Bring to a boil then reduce heat to low and cover. Cook rice for 10 minutes. 
  • Crack your egg into a bowl and whisk. Stirring constantly, add the remainder of your chocolate coconut milk and a spoonful or two of your hot rice, to temper your eggs. 
  • Once this mixture has combined pour it into your hot rice, stirring to incorporate. Continue to stir over low heat for 2-5 minutes or until your rice pudding has developed the consistency you like. 
  • Serve and enjoy!
