Homemade Crunchy Granola Recipe From Special Guest Melissa from Redfly Creations

Homemade Crunchy Granola

Today I am very excited to introduce you to Melissa from Redfly Creations. Melissa left a comment recently letting me know that she was going to try my recipe for No Peel Crockpot Apple Sauce. I popped over to her blog to take a peek and was blown away. Melissa is the blogger that I would like to be “when I grow up”. Her photography is gorgeous, her recipes DELICIOUS and her craft and design projects would brighten any home.  Head on over to Redfly Creations and take a peek. I’m drooling over her Perfect Lemon Bars but have vowed that I won’t make them until the Today’s Parent Healthy Family Challenge is over.

So without further ado I pass the reins over to Melissa. Enjoy!

Hi Sew Creative readers!!  My name is Melissa.  I blog over at Redfly Creations.  You are welcome to stop by anytime and check out all my other recipes, diy and sewing projects.

I wanted to thank Crystal here at Sew Creative for this opportunity to share one of my recipes today!   This granola is a favorite at our house.  We eat it almost every morning for breakfast.  Enjoy!

Homemade Crunchy Granola

It was always a special treat when my mother would make homemade granola.  Over the years I have carefully tasted each recipe to see if it resembled my mother’s.  After trying out many different recipes, I’ve found one that I like, and it is not very difficult to make.  The added plus for me, is that it keeps me feeling full all the way till lunch (that doesn’t happen very often).

Peanut Butter Granola Ingredients:

  • 8 cups oats
  • 1/2 c margarine-melted
  • 1/4 c olive oil
  • 1/2 c coconut
  • 1 c chopped peanuts
  • 1 c peanut butter
  • 1 tsp salt
  • 2 Tbsp brown sugar
  • 1 cup honey

*1/2 cup chopped chocolate chips, which will be added after baking.

Directions:

Mix oats, coconut, peanuts, salt.  Melt all the remaining ingredients together, then pour over the dry ingredients.  Blend well.

Spread onto two cookie sheets with edges.  Bake at 350 degrees for 10 min.  Stir and bake 10 more min. or until slightly browned.

Cool, add chocolate chips, store in an airtight container.

Enjoy!
