As I type this, I’m sitting beside my window and looking out to a dreary, grey sky. That being said, it’s still warm which has me so excited for summer.

I’m not going to lie, summer time usually means treats for me. I love BBQs, macaroni salad, an extra burger at dinner (guilty) but I also love to fit my shorts. It’s not always easy to balance, but with a healthy summer treat like these strawberry pineapple popsicles it’s possible!

I made up these strawberry pineapple popsicles because I was due. Due to make something fun and healthy with my four-year-old son and due for another popsicle inspired recipe over here at Hello Creative Family.

Last July I concocted a yummy popsicle recipe for HCF using blueberries, cream cheese, and a few other ingredients. That’s how the Blueberry Cheesecake Protein Pops were born.

If  you don’t have a popsicle mold yet, you need to get one. You can basically throw anything in it and it turns out. I even experimented with liquor and came up with these Irish Cream Coffee Ice Pops (you can’t go wrong with Baileys).

I even have a Pinterest board devoted to Popsicles and Ice Pops, make sure to follow along and check out Hello Creative Family’s Creative Ice Pops board too! You can never have too many ice pop recipes!

Strawberry Pineapple Popsicles Recipe

A quick note about this recipe: when you puree all the ingredients together it will be slushy and that’s okay. It will freeze right.

I used frozen fruit in this recipe since that’s what I had handy in the freezer.

Another delicious rendition of this recipe would be to add some coconut extract. I add coconut extract to most of my popsicles and smoothies to add a tropical twist.

Ingredients:

-1 cup water
-1 cup strawberries
-1/2 cup pineapples
-1/2 cup cashew milk

Directions:

1. Add all ingredients into a high powered blender and puree.

2. Add to the popsicle mold and freeze for 6-8 hours. (Alternatively… Crystal is a big fan of the Zoku Quick Pop Maker! Pour your puree into your Zoku Quick Pop Maker and have ice pops ready to eat in just 7 minutes!)
