Can you feel that? That heat? It’s the sun! Yes, it’s finally summer which (for me) means a lot of guilty pleasures around every corner: BBQ, wine and ice cream. I don’t want to over do it over the next few months and un do all my health and fitness progress so I opted to take the pleasure of ice cream and turn it healthy. You guys – healthy ice cream is even BETTER then regular.

Since this is my first post for Hello Creative Family, I think I should introduce myself. My name is Randa and I’m the blogger behind The Bewitchin’ Kitchen. I believe the kitchen is the heart of the home. Life revolves around the kitchen table; whether it’s discussing your day, sharing the highlights of your trip, or just having quality time with a loved one. I’ll be sharing recipes with your over the next year, and I believe in balance when it comes to a healthier lifestyle. Sometimes you’ll get a sinfully sweet creation and other times you’ll see something on the lighter side.

Since I had my fair share of cotton candy at the local fair last night, I decided to create something a little more figure friendly for everyone.

So here’s the thing, I love ice cream. I love it so much that I have been known to just eat a whole pint while watching Grey’s (we’ve all been there right?). That being said, ice cream doesn’t like me back. I get so bloated and distended from it I look like I’m 4-5 months pregnant.

Here’s some proof of that:

Since I love ice cream, and it doesn’t love me back, I decided to come up with a delicious, but still healthy alternative. This recipe isn’t diary free (due to the cream cheese) but you can leave that out if you’re looking for a dairy free alternative. Read on for my delicious, Healthy Raspberry Cream Cheese Ice Cream Recipe!

Healthy Raspberry Cream Cheese Ice Cream Recipe

Ingredients:

  • Banana (frozen)
  • 1 cup frozen raspberries
  • 1 tbsp cream cheese

Instructions

It’s helpful if you peel the banana before you freeze it, but if you’re like me and just tossed the whole thing in the freezer; microwave it for a few seconds at a time until the peel comes off easily.
Toss all the ingredients into a blender and blend until smooth and creamy.

  1. Have in the past used the frozen bananas to make “ice cream” , never thought to add cream cheese to make it richer and smoother. Thanks for the idea.
