Sometimes 4pm hits, as I wind down my workday, and I realize I have no idea what to make for dinner. And I do have those days, don’t we all!, when I am really tempted to take out a box of cereal and declare it “cereal night!” (My children would probably actually love this). But my quest to serve healthy, homemade meals most nights of the week means I hunker down, search the pantry and whip something up that will fill our bellies. When I’m on my game, it’s sitting in the crockpot by 10am, it is prepped and in the fridge or it is in the freezer awaiting a re-heat.
