I have a blog called Homemade & Yummy. The title is what it is all about. Wonderful food that YOU make at home. Food doesn’t have to be complicated, it just has to taste good. It’s all about getting into the kitchen, experimenting with wonderful ingredients and creating some awesome delicious meals for your family and friends.
Do you have food memories as a child? I know I sure do. I certainly remember growing up watching my mom, baba (that’s grandmother in Ukrainian) and aunts busy in the gardens all summer long growing wonderful fresh vegetables. Come the fall season, their work would take them indoors as they canned and preserved their harvest for the long winter months.
I still remember saying to myself “that is A LOT of work”…. when I grow up I am going to be a city girl and buy stuff at the store. Little did I know even though that did happen, the memories of the aromas and flavours of those efforts in the kitchen come back with the desire to create them again.
We love tomatoes in our house. Pasta sauce, pizza sauce, chilis and soups are just a few of the ways they make their way into my dishes. I do purchase canned tomatoes from the store since they do manage to preserve the taste and texture pretty well. However, if you want really robust, intense tomatoes that you can use in your wonderful kitchen creations…try these Simple Roasted Tomatoes.
I know you are thinking…I don’t have the time. Seriously it is so easy, the oven does all the work and you reap the rewards of awesome tomatoes all winter long.
Head over to a local market and get yourself a box of tomatoes. I used Roma tomatoes, but really any tomato will do. Other varieties will have more seeds, more juice…but there is not a wrong decision here so choose your favourite.
Now comes the hard part (but I don’t mean that….it is so freaking simple). Wash the tomatoes, cut them in 1/2 or 1/4 depending on their size. Put them in a baking dish (make sure it has a rim or you will have juice running into the oven). Be sure not to crowd the dish as you want the tomatoes to have room to be able to get lots of heat around them. Generously coat them with olive oil. Throw in some sliced fresh garlic, season with salt and pepper and I also added some Italian Seasoning.
Give this a stir. Place them in a 350º F oven for 2 hours!! Every now and then, as you take in the wonderful aroma of these roasting away, give them a stir. FYI your house will smell like some little kitchen tucked away in Italy!!
When they cool, place your desired amount into freezer bags and enjoy all winter long. Nothing fancy or complicated. That’s it…see told you it was simple. You don’t even need a recipe… but here’s one just in case you want to save it for later.
Ingredients
- -Tomatoes your favorite kind, as many or as few as you would like!
- -Olive oil enough to coat
- -Salt and pepper
- -Garlic as much as you'd like
- -Your favorite herbs and spices
Instructions
- Preheat oven to 350F
- Wash tomatoes then cut in half or in quarters
- Place in a baking dish or baking sheet with a rim and drizzle with salt, pepper, olive oil and spices. Toss to coat.
- Bake for 2 hours, stirring on occasion
- Enjoy!
Taking the time roasting your tomatoes is so rewarding. Your family will love you for it…trust me.
