When I was a kid I had terrible problems with motion sickness– Airplanes, cars, boats… If it moved and I was in it, I got sick. My parents tried all of the natural motion sickness cures they could find, including these horrible ginger chewable pills that made me feel even sicker than the motion did… seriously, they were bad. For years I thought that I didn’t like ginger, but now I know better.
Ginger is one of my favorite flavorings. The stronger the better. I love a super spicy ginger beer. I’ve crystallized my own ginger and love making a hot drink in the winter with crystallized ginger and boiling water. Ginger in chicken burgers, stir-frys, Asian lettuce wraps, pasta salad and sticky chicken… Yummers! I’ve even started dehydrating ginger to make my own ginger tea!

Created by Kathleen, as a remedy for her friend’s morning sickness, these cookies are packed full of ginger flavor while also being a sweet treat. They bake up thick and fluffy and look absolutely drool worthy.
