Today I am very excited to introduce you to Melissa from Redfly Creations. Melissa left a comment recently letting me know that she was going to try my recipe for No Peel Crockpot Apple Sauce. I popped over to her blog to take a peek and was blown away. Melissa is the blogger that I would like to be “when I grow up”. Homemade Crunchy Granola
It was always a special treat when my mother would make homemade granola. Over the years I have carefully tasted each recipe to see if it resembled my mother’s. After trying out many different recipes, I’ve found one that I like, and it is not very difficult to make. The added plus for me, is that it keeps me feeling full all the way till lunch (that doesn’t happen very often).
Peanut Butter Granola Ingredients:
- 8 cups oats
- 1/2 c margarine-melted
- 1/4 c olive oil
- 1/2 c coconut
- 1 c chopped peanuts
- 1 c peanut butter
- 1 tsp salt
- 2 Tbsp brown sugar
- 1 cup honey
*1/2 cup chopped chocolate chips, which will be added after baking.
Mix oats, coconut, peanuts, salt. Melt all the remaining ingredients together, then pour over the dry ingredients. Blend well.
Spread onto two cookie sheets with edges. Bake at 350 degrees for 10 min. Stir and bake 10 more min. or until slightly browned.
Cool, add chocolate chips, store in an airtight container.
