Quick and Easy Salsa Verde Recipe

Ingredients

  • 1 pound of tomatillos husks removed and washed (Approximately 4 or 5 medium sized tomatillos)
  • 1 jalapeño cut in half lengthwise (add more or less depending on how spicy you like your salsa)
  • 4 cloves of garlic leave skin on for roasting
  • 1/2 medium onion peeled
  • 1/2 cup cilantro
  • Juice from 1 lime
  • Pinch of salt

Instructions

  • Preheat oven to 400F.
  • Lay tomatillos, jalapeño, garlic and onion on a baking sheet. Roast on the top rack of your stove for 15 minutes. (Note: I do this in my Breville Smart Oven instead of heating the whole house using the big oven.)
  • When your ingredients are done roasting the tomatillos should have turned a yellowish green color. Remove the peel from the garlic and place all roasted ingredients along with the cilantro, lime juice and salt into the food processor.
  • Blend until smooth.
  • Chill in your refrigerator (though this is also pretty yummy served hot!)
  • Enjoy! Serve with chips, tacos, burritos or as a topping on your favorite grilled meat!
