Preheat oven to 425 degrees F. Put your cast iron frying pan in the oven to preheat as well.
While oven is preheating combine flour, milk, eggs and nutmeg or cinnamon in a bowl. Whisk until combined.
When oven is done preheating place butter in cast iron frying pan and close the door for a minute giving the butter a chance to melt.
Take your pan out of the oven, pour batter in, swirl around the pan, then put pan in the oven. Cook for 15-20 minutes or until the pancake is golden brown.
Remove from oven and sprinkle with confectioners' sugar and lemon juice. Serve and enjoy.
Optional: Top with fresh fruit or make a simple berry syrup by heating fresh or frozen berries on the stovetop

Recipe serves 2 people. You can double the recipe and cook 2 pans of Dutch Baby Pancakes at one time.
