In a small saucepan combine coconut, water, cocoa powder, honey and vanilla. Bring to a boil, reduce heat to medium and let bubble for 2-5 minutes.
Transfer coconut mixture to your blender (a high speed blender like a Blendtec works best). Blend for 60 seconds.
Pour mixture through a fine mesh sieve into a bowl or a measuring cup. Push as much liquid as possible out of the coconut pulp. Congratulations! You've made homemade chocolate coconut milk!
In a small to medium saucepan combine rice and 1 cup of your chocolate coconut milk. Bring to a boil then reduce heat to low and cover. Cook rice for 10 minutes.
Crack your egg into a bowl and whisk. Stirring constantly, add the remainder of your chocolate coconut milk and a spoonful or two of your hot rice, to temper your eggs.
Once this mixture has combined pour it into your hot rice, stirring to incorporate. Continue to stir over low heat for 2-5 minutes or until your rice pudding has developed the consistency you like.
