I do my best to live a healthy lifestyle, all while being balanced. I believe in enjoying the foods I love, but keeping it clean most of the time. Now that it’s bikini season, I work a little harder and eat a little better but I never skimp on flavor. I wanted to share this delicious recipe I recently tried for Buffalo Chicken with Avocado Coleslaw.

Over on my blog, The Bewitchin’ Kitchen, I recently reviewed the Feel Like a Fitness Model Cookbook from Teena Gudjonson and during my review I sampled a lot of the recipes in her book. There wasn’t a single recipe that I didn’t like. If you want my two cents, I think everyone should own this book. There are so many healthy recipes that are full of flavor and that are incredibly unique, like this recipe for Buffalo Chicken With Avocado Coleslaw (by the way it’s supposed to be Buffalo Chicken Strips but I got a little lazy).

An element that surprised me with this recipe was the use of avocado in the coleslaw dressing, it’s perfect! It’s still creamy but it’s full of healthy fats that not only keep you full but keeps your body running the way it should.

Buffalo Chicken With Avocado Coleslaw Recipe

Chicken Ingredients:

  • 3-4 chicken breasts
  • Hot Sauce of choice (I used Franks Red Hot Sauce)

Avocado Coleslaw Ingredients:

  • 1 small bag of pre-mixed coleslaw
  • 1 jalapeno pepper, chopped and seeds removed
  • 2 tbsps balsamic vinegar
  • 1/2 cup 0% Greek yogurt
  • 1 tbsp brown sugar
  • 1 tbsp olive oil
  • 1 tbsp hot sauce
  • Juice of 1/2 lime
  • 1 tsp of pepper and dry mustard powder
  • 1 avocado, peeled and mashed
  • 1/2 cup chopped cilantro

Instructions:

  1. Pour hot sauce over chicken breasts, enough to coat, and let marinate for a few hours.
  2. Bake at 375 for 50 minutes or grill until no longer pink.
  3. While the chicken is cooking add all of your ingredients for the coleslaw (except for cilantro and avocado) into a serving bowl.
  4. In a separate bowl add your mashed avocado and cilantro, mix together.
  5. Right before serving add the avocado mixture to your vegetable mixture.
  6. Enjoy!

Notes

Teena Gudjonson's original recipe from Feel Like a Fitness Model directed to use 2 cups each: green and red cabbage, 1 cup shredded carrots, 5-6 green onions and 1/2 cup celery. I'm terribly lazy, so I just bought the bagged variety. It's a great time saver!

This recipe for Buffalo Chicken with Avocado Coleslaw is perfect for the summer, the coleslaw is cool and creamy but has a zing from the hot sauce and jalapeno. If you have a mild palate, it’s really not too spicy but just omit the jalapeno.

    what a great recipe! I was actually looking to tie in avocado into some of our dishes and this is a great way of doing it.
