Mediterranean Veggie Stuffed Chicken Breast Recipe
My favorite thing about summer is all of the delicious fruits and vegetables that we can pick up at the local farmers stand. We have a farmer’s stand that we’ve been going to since before I was pregnant with Bean (so over 8 years!!!) The women at the stand know my kiddos, remember them each year, have watched them grow up, and always make them feel special.
With the ingredients that I pick up there, I can make a fresh, healthy and delicious meal that seems like it took hours to make, but really took just minutes! This stuffed chicken rice bowl is one of my favorite summer meals. It’s fresh, flavorful, healthy and delicious. You can prep the veggies the night before, so that when you come home from a long day at work all you have to do is stuff the chicken breast with the fillings and pop it in the oven.
My kids love this as a rice bowl. For adults I lay the chicken breast whole on top of a bed of Basmati Minute Rice®. For the kids, I chop their chicken breast up and mix it with the rice.
I love a recipe where all I have to do is pop it in the oven and turn on the stove and I’m done! It gives me a chance to cuddle on the couch with my kiddos while dinner cooks itself. Being the health conscious mama that I am, I originally wondered what it was about Minute Rice® that made it cook up so quickly. I wasn’t willing to put convenience before the health of my family and wondered if it had extra additives that made it cook faster. After some research I discovered that, the only difference between Minute Rice® and other rice is that the rice has been pre-cooked and then dried to make cooking faster! If you look at the ingredient list, there is one ingredient- rice. There are no additives or preservatives which makes this mama very happy!
Having rice that cooks up so quickly makes getting dinner on the table a breeze, which is something I know all busy parents can appreciate.

Mediterranean Veggie Stuffed Chicken Breast Recipe
Ingredients:
-4 chicken breasts
-1 medium zucchini (cut into strips)
-1 bell pepper (cut into strips)
-1/2 sweet onion (cut into slices)
-1/2 cup of your favorite fresh herbs (if available, a sprinkle of dried herbs will work in the winter months), we love to make this recipe with basil.
-1/2 cup of your favorite cheese (we love ours stuffed with bocconcini or feta)
-2 packets of Minute Rice® Basmati or your favorite variety (1 box has 4 packets)
-2 tablespoons of olive oil
-Salt and pepper to taste
-Optional: High quality balsamic vinegar to drizzle on top
Directions:
1. Preheat oven to 400F.
2. Butterfly your chicken breast by laying it flat and slicing into the long side of the breast. You want your chicken breast to look a bit like a hot dog bun. Leave the back of the breast connected (don’t slice all the way through.)
3. Open your chicken breasts flat, sprinkle with salt and pepper, stuff with veggies, herbs and cheese. Close breasts and either place as is is in a glass baking pan or tie breasts closed with a piece of baker’s twine. Drizzle with olive oil and sprinkle with salt and pepper.
4. Bake for 30 minutes or until chicken is no longer pink inside and juices run clear. While chicken is baking prepare rice per instructions on box.
5. Serve on top of bed of rice. Optional- Drizzle balsamic vinegar on top.
Makes 4 chicken breasts.
