1poundof tomatilloshusks removed and washed (Approximately 4 or 5 medium sized tomatillos)
1jalapeñocut in half lengthwise (add more or less depending on how spicy you like your salsa)
4clovesof garlicleave skin on for roasting
1/2medium onionpeeled
1/2cupcilantro
Juice from 1 lime
Pinchof salt
Instructions
Preheat oven to 400F.
Lay tomatillos, jalapeño, garlic and onion on a baking sheet. Roast on the top rack of your stove for 15 minutes. (Note: I do this in my Breville Smart Oven instead of heating the whole house using the big oven.)
When your ingredients are done roasting the tomatillos should have turned a yellowish green color. Remove the peel from the garlic and place all roasted ingredients along with the cilantro, lime juice and salt into the food processor.
Blend until smooth.
Chill in your refrigerator (though this is also pretty yummy served hot!)
