For the Lemon Loaf
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2 large eggs room temperature
- 1 cup granulated sugar
- ½ cup softened butter
- 1 teaspoon vanilla extract
- 1/2 cup Greek yogurt or sour cream
- Juice of 1 lemon 3 tablespoons lemon juice if using bottled lemon juice
- Zest of 1 lemon optional
For the Lemon Glaze Drizzle
- 1 cup powdered sugar
- 3 tablespoons fresh lemon juice
- Zest of 1 lemon optional
Preheat your oven to 350°F (175°C).
Grease and line a 9x5-inch loaf pan with butter and set aside. (Alternatively you can line your loaf pan with parchment paper for easy removal.)
In a medium bowl, whisk together the dry ingredients: flour, baking powder, and salt.
In a separate large bowl, whisk the eggs, sugar, butter and vanilla until creamy.
Add the sour cream/Greek yogurt, lemon juice and lemon zest and whisk until combined.
Fold the dry ingredients into the wet mixture just until combined. Do not overmix.
Pour the batter into the prepared pan and smooth the top.
Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
While the loaf cools, whisk together the glaze ingredients until smooth.
Drizzle liberally over the loaf once cooled—or while still warm if you want some glaze to soak in!
