Ingredients

For the Lemon Loaf

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 large eggs room temperature
  • 1 cup granulated sugar
  • ½ cup softened butter
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt or sour cream
  • Juice of 1 lemon 3 tablespoons lemon juice if using bottled lemon juice
  • Zest of 1 lemon optional

For the Lemon Glaze Drizzle

  • 1 cup powdered sugar
  • 3 tablespoons fresh lemon juice
  • Zest of 1 lemon optional

Instructions

  • Preheat your oven to 350°F (175°C).
  • Grease and line a 9x5-inch loaf pan with butter and set aside. (Alternatively you can line your loaf pan with parchment paper for easy removal.)
  • In a medium bowl, whisk together the dry ingredients: flour, baking powder, and salt.
  • In a separate large bowl, whisk the eggs, sugar, butter and vanilla until creamy.
  • Add the sour cream/Greek yogurt, lemon juice and lemon zest and whisk until combined.
  • Fold the dry ingredients into the wet mixture just until combined. Do not overmix.
  • Pour the batter into the prepared pan and smooth the top.
  • Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool in the pan for 10 minutes before transferring to a wire rack.
  • While the loaf cools, whisk together the glaze ingredients until smooth.
  • Drizzle liberally over the loaf once cooled—or while still warm if you want some glaze to soak in!
  • Serve and enjoy!
