Strawberry Coconut Yogurt Bowl

Here on the North Coast of British Columbia the sun hasn’t been out since the beginning of August, until today. I wanted to celebrate the sunshine with a healthy snack that was bright and fresh – so I made up this strawberry coconut yogurt bowl.

Last week on my blog (The Bewitchin’ Kitchen) I did up an Apple Cinnamon Yogurt Bowl and it was incredible. 

Yogurt bowls are one of my favorite snacks because the possibilities are endless. With all the variety of yogurt out there, the fruit and the flavors you can add you can create your own unique yogurt bowl that suits your mood. 

I’m a sweets fan at night. Thursday nights you can find me on my sofa, watching some Shonda shows while eating my feelings away about whatever character is in mortal danger with chocolate. I joke about it, but it’s not that funny; especially with a recent fifteen-pound weight gain. 

Yogurt bowl to the rescue. When I have those chocolate pangs I like to mix up some 0% plain greek yogurt, cocoa powder, powdered peanut butter, and apples. It’s a whole lot of yum right there. If I have the extra room in my calories I will sometimes add some cookies n’ cream whey protein in place of the cocoa and P.B. 

That being said, strawberries and coconut were the perfect answer to this mid-morning craving and I’m glad I can share it with you all. Now that I have time to think more this particular yogurt bowl, if I could go back in time I would toast the coconut first. Toasting coconut is easy and you don’t even need an oven if you’re in a rush, just toss it in the microwave for a few seconds.

In this particular version I used strawberry greek yogurt that was about to go bad, I usually made it with plain, life happens.

Strawberry Coconut Yogurt Bowl

  1. 5 strawberries, sliced
  2. 3/4 cup greek yogurt (plain is ideal but use what you have, in this case I used up my strawberry greek)
  3. 1 tbsp unsweetened shredded coconut.
  1. In a bowl place the greek yogurt. Top with strawberries and coconut.
  2. That’s all you have to do for this healthy snack.
