Nothing says comfort like a warm pie. Hello Creative Family's resident baker, Renee, shares her Pear and Honey Pie Recipe, building on the kitchen skills she taught in her perfect pie crust recipe.

I hope you all had the chance to try out my previous recipe for Easy Pie Crust Recipe For Perfect Pie Every Time!  I’ve certainly been making my share of pies these last few weeks, and I predict more to come as we head into spring and summer with all of the lovely fresh produce. I love making pies during the winter too! Really isn’t pie perfect all year long? There’s something very comforting about turning the oven on during cool and windy fall days.

Today we’re going to be building on basics. We gave you all the tools you need to make a perfect pie crust, and now we’re going to give you and idea of what to fill it with! Pears and honey! This Pear and Honey Pie screams comfort on a cool day, with notes of cinnamon and nutmeg, and just the right amount of sweetness.  Every fall I buy baskets full of locally grown pears for baking and eating.  I am so lucky to have such amazing fresh, produce at my fingertips.  What better way to showcase the delicate flavor of pears, than wrapped in a blanket of golden, flaky pastry?  I’m a believer in using local ingredients too, so I often choose honey that is processed in my community, as a sweetener when I can.  I say this a lot, as a mom and as a previous bakery owner, locally grown foods taste better and are better for you!  

For this pie, I recommend slightly firm Bosc Pears.  They are a sweet pear, that holds their shape really well while baking.  I’ve also added almond slices to the top crust just before baking.  I do this often with pies, as toasted nuts, along with a little sprinkle of sugar on top, have excellent texture and flavor. 

Pear and Honey Pie is an awesome alternative to traditional apple pie.  It will be a welcome and delicious surprise at your next family dinner or gathering!

Perfect Double Crust Pastry Ingredients:

2 cups flour

1/4 tsp salt

1 cup cold Crisco Shortening, cubed

4-6 tbsp cold orange juice

Pear and Honey Filling Ingredients: 

-7 cups sliced pears (Bosc or Anjou Pears work well)

-1 tbsp lemon juice

-1/3 cup brown sugar

-1/3 cup honey

-1/2 tsp cinnamon

-1/4 tsp nutmeg

-3 tbsp flour

-1 tbsp unsalted butter, cubed

-1 tbsp heavy cream for brushing on the top crust

-1 tbsp sliced almonds for garnish on top crust (optional)

-sprinkling of sugar for top crust

Directions:

 

  • Preheat oven to 425°
  • *Make the pastry and follow these directions after chilling:
  • Mix the pear slices and lemon juice. Add the sugar, honey, cinnamon, nutmeg and flour and set aside.
  • Roll out 1 pie crust disk on a floured surface to a size approximately 12-inches round. Transfer it to 9-inch pie dish. Trim the bottom crust to the edge of the pie plate.
  • Place the pear filling in the bottom of the pie shell. Dot with cubed butter.
  • Roll out the second pastry disk to approximately 12- inch round. Use a small cookie cutter to cut out any shapes for steam vents before placing the pastry on top of the pie. Place on the top of the filling. Trim the excess pastry to about 1/2 over hang. Fold the top under the bottom crust and crimp the edges to seal. Flute the edges if desired. If you haven’t cut any shapes out for steam vents, go ahead and put 4 steam slits, with a sharp knife, about 3/4 of an inch long near the centre of the pie.
  •  Lightly brush some heavy cream on top of the top crust and sprinkle with sugar and almond slices.
  • Bake for 15 minutes at 425° then reduce heat to 350° and bake for 40 minutes longer until crust is golden and filling is bubbling. It’s best to allow the pie to cool before slicing.

  1. Right now, in Canada, I don’t think there is anything in season 😉 But I love ALL PIE! If it’s a PIE its my favourite! This pear and honey pie looks absolutely delicious! way too good to share!

  2. I can’t really think of pie I don’t like. Your pear and honey pie sounds really good and it’s one I haven’t had before. My Grama always made a really good apple pie so that would probably be a favorite. Your pictures are beautiful. Thanks for sharing.
