Lunches are tough for me, and lately I have been stuck in a rut. I want to make something healthy but I also want it to be filling and fast. I don’t have time to heat up a pan and wait 20 minutes and, usually by the time lunch rolls around, neither does my stomach. That’s why I love this quick and easy lunch idea! It’s a recipe for Chicken Vegetable Rice Crunch using Minute Rice® 1 Minute Rice® Ready to Serve Cups.
I work from home and although that gives me the convenience of being home with my son and flexibility with what we can do, I still have to work. I usually eat on the fly, behind the computer either editing and writing or it’s the time when my toddler and I take a picnic break and have lunch at the park. So having a nutritious quick and easy lunch idea that takes less than two minutes to put together is highly beneficial in my books.
I have been using the Minute Rice® 1 Minute Rice® Ready to Serve Cups for the past few days and they have been a saving grace. For dinners, they’re perfect for a quick (one minute is all it takes) side dish. There are many uses for them: you can leave them as is, add a few vegetables and side dishes to beef up the side dish or add a protein of choice and create a whole meal. A whole meal can be done in under two minutes.

Quick and Easy Lunch Idea- Chicken Vegetable Rice Crunch Wrap Recipe
- 1 Minute Rice® Ready to Serve Cup – Vegetable Medley
- 3/4 cup cooked shredded chicken
- 2 tbsps cucumber yogurt dressing (tzatziki works as well)
- Chopped Walnuts (about a handful)
- Shredded romaine lettuce
- Additional vegetables of choice (radishes, purple onion, carrot, bell peppers)
- Whole Wheat Pita bread
- Heat Minute Rice®® Ready to Serve Cup – Vegetable Medley in microwave, per package instructions.
- Transfer to bowl, and add cooked shredded chicken and ranch dressing.
- Stir in chopped nuts, sliced celery, sliced radish and shredded lettuce.
- Stuff into pita halves

The chicken vegetable rice crunch also makes a great meal for a quick and easy dinner, especially when it’s too hot to run your oven (like it has been here lately). They’d also be fun for school lunches.
