Hi Crafty Friends! My very favorite thing about summer has to be all the fresh, local produce! We have a farmer’s stand that we shop at every single summer. I love shopping for the freshest, most flavorful ingredients and inventing new dishes and recipes.

I love veggies, but the fruits are what make me extra happy. Local strawberries, raspberries, blueberries, peaches and cherries are my favorite, and my kids love them too! I wish that they were available all year long, but I guess that’s what makes summer extra special!

Sweet Amsterdam approached me recently and challenged me to come up with a fresh and flavorful summertime recipe using one of their brand new stroopwafel flavors! It will come as no surprise to any of my friends and family that I chose Lemon bar!

Notes

This recipe makes enough sorbet to make 12 ice cream sandwiches. If you would like to half the recipe, we would suggest you only half the cookie portion and make the full portion of sorbet so that it freezes properly in your ice cream maker. This sorbet is delicious on it’s own so you could easily make 6 ice cream sandwiches using 1 box of Sweet Amsterdam Stroopwafels and eat the other half of the strawberry lemonade sorbet plain.

The lemon stroopwafels sound delicious with the strawberry lemonade sorbet! A great summer cool dessert.

  2. I bet the caramel would be great to use when making smores!

  3. Heather Elliott says:

I like the chocolate banana variety., We have silicone molds for making ice cream sandwiches, but we never make them because we don’t want to take the time to make the cookies to use as the “bread”.. These wafels would be the cheater version, like using a store bought pie crust to make turnovers!!!

I love stropwafels! I’d eat the caramel cinnamon ones plain with my afternoon coffee!

  7. Penny Branson LeBaron says:

Caramel cinnamon I like to enjoy them the classic way by putting over a hot drink and letting them warm.

  8. I think I would enjoy the caramel cinnamon with my coffee on the weekends.

  9. I’d take the Caramel Cinnamon waffles, fry them, and coat them in cinnamon sugar, to make ‘churro’ stroop waffles. Then would take two, fill them with spiced, cooked apples to make an apple churro sandwich and serve with some vanilla ice-cream for a tasty dessert!

  10. Elizabeth Beales says:

I can’t wait to try the Lemon flavor!

  11. I’ve never had stroopwafels before. Would love to try them. Where can you purchase them?

I would make a banana split with the CHOCOLATE BANANA ones.

  17. I would eat them just like this. Then I would turn it into the classic peanut butter chocolate combo!

I love stoop Waffles. Now you have me thinking on how to eat them other than straight from the box. I’ve only had the caramel cinnamon, but lemon sounds awesome. Then just add sliced strawberries on top for a sweet treat.

  20. I think the Lemon sounds pretty zesty!!
